Ok, just making sure not missed anything.
Given that
The NUC can’t be plugged into a TV, as with the NAS units in a different room
I don’t use Tailscale for ARC, the port approach works fine for me
I use network connected volumes rather than direct connected USB drives
The NAS connections are all working fine into the Roon Server
I don’t see the need to update and move to this RoonOS 3.0 version, unless anyone can see any fundamental difference given the above.
Potentially slightly outdated, whatever was current when the installer was made. But after the first boot, it checks for updates and you can then install any automatically if available. That is mentioned in the linked instructions.

My update to 3.0 was less than smooth tbh and I was already on 2.1.
Constant restarts of rock after installation which eventually caused my attached 8 TB HDD to become in a read only state.
Had to remove and run windows drive repair tool.
Reattached to the nuc and exactly the same performance again!!
Third time was a charm though, it restarted just twice and did not affect the HDD this time.
Very disconcerting and I have little confidence that it might not happen again.
No I have not done any further investigation. Rock has been running for 16 hours now so I just need to keep monitoring it

Known issue for some machines apparently, there are several Support threads about it.
Perhaps this
Hello everyone,
The team is still looking into the root cause of this issue, but we have a plausible theory that the issue is related to the HDMI output capabilities on this specific model of NUC. As @drw and @Berry_De_Haas noted, connecting a screen appears to let the ROCK system run normally on RoonOS 3.0.
Please try to connect your NUC via HDMI if you have a monitor, TV, or HDMI/EDID emulator available and are facing this issue on RoonOS 3.0. If you do not have anything HDMI to connect the …
I also can confirm that if a monitor is connected to the HDMI and USB keyboard my NUC NUC8I7BEH - Core i7-8559U no longer crashes on RoonOS 3.0.

Correct and well aware but…odd that it stopped the restarts after a while with no intervention or other changes on my part.
Of course it may only be a temporary reprieve

Yep, while out using Arc it crashed again and sent the HDD into read only mode.
Obviously something not quite right.
Successfully rolled back to 2.1 for now until Roon resolve this.
