Since this is an Airplay Zone, have you tried toggling Airplay Compatibility Mode for this Zone in the Device Setup window? · There is no change in behavior.
Does the device show up at all in Roon Settings -> Audio? · The Zone is listed under the wrong protocol
Does the device play audio from another source when using the same connection? · The device has no problems with another audio source
Have you checked that Roon is whitelisted in any firewalls? · I've checked the firewall and the issue remains
If the device has multiple output options, do the other options work as expected? · Multiple output types are affected

You need to do two things:
Set it to compatibility mode as @Michael_Harris wrote.
Add it to the Apple Home app. (So you need an iPhone or similar)
This is a workaround for the time being and Roon is working on a solution.
This is because Roon added AirPlay 2 support, the Mu-so 1 only supports AirPlay 1, and Roon‘s built-in fallback doesn’t work otherwise at the moment

It seems to work for most AP1 endpoints (sometimes with compatibility mode), the Mu-so 1 seems to be one of few outliers that needs the Apple Home entry. No idea about the resolution timeline, though.

In many other cases before, like the one I linked, people confirmed „it works now“ after adding it to Apple Home and enabling the compatibility mode.
I don’t think that they did anything special and I don’t think that Apple Home remote access has anything to do with it because this is for, well, remote access.
I don’t know what else to do, maybe official support does when they return
